Beef Oriental
1lb beef stew or chuck,cut in ½ x 3 in strips
3 tablespoons fat
1/2 cup water
1/4 cup soy sauce
1 teaspoon sugar
1/2 teaspoon salt
dash of pepper
3 fresh tomatoes, peeled and cut in wedges
3 medium onions, quartered
1 mediun green pepper, cut in strips
3 tablespoons cornstarch
1/4 cup water
Brown beef in fat in pressure cooker. Add water. Soy sauce, sugar, salt and pepper. Cover, set control at 15 lbs 12 min or at 10lbs for 15 min after the control starts to jiggle. Cool pan normally 5 min and then place pan under faucet. Add tomatoes, onions, and green pepper. Cover and set to 15lb and cook for 2 min after control starts to jiggle. Reduce pressure instantly. Blend cornstarch and cold water in mixette until it is smooth gradually add cornstarch and water mixture to meat and vegetable mixture, stirring constantly. Cook over medium heat until gravy is smooth and thick-ended, serve with rice, if desired 4 servings.
